This Level 2 Apprentice course is ideally suited for those who have studied the Level 1 course in Cookery and wish to improve their abilities academically whilst using what they've learnt in the classroom to progress their talents in the workplace.
You will learn more in-depth about how to prepare specific dishes and cuisines as well as understanding portion control and the benefits of healthy eating. Additionally to this you will learn to understand employment rights and responsibilities in the workplace.
A range of subject areas including:
- Employment Rights and Responsibilities,
- Working effectively as part of a hospitality team,
- Food safety,
- Prepare and cook healthy meals,
- Skills to produce a variety of dishes using different cooking methods,
- Principles of kitchen documents,
- Portion control.
You will be visited by an assessor/tutor in the workplace
NVQ Diploma in Professional Cookery (QCF)
Assessment is by practical observations, course work, assignments and external tests.
Places are offered through an informal interview.
You will need the following to gain entry on to the course:
- Employed within the industry,
- Reference from current employer,
- Assessment of Maths and English.
This course is aimed at anyone working in or who are seeking to start a career as a chef within the Hospitality industry.
Good levels of English and Maths are important for your success in your course, your chosen vocation and life. Throughout your course you will continue to develop your English and Maths skills in your vocational classes.
If you haven't achieved an A*/9 - C/4 grade in English or Maths at GCSE, or a Level 2 Functional Skill, you will also be working towards a qualification in English or Maths at a level that will enable you to progress towards these grades.
